Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 can diced tomatoes
  • 1 egg
  • 1/2 cup frozen biscuits, grated
  • 1 teaspoon salt
  • 1/4 cup ketchup

Instructions

  1. Preheat oven to 350 degrees F.

  2. Grate the frozen biscuits through the large end of a cheese grater.

  3. In a large bowl, combine all of the ingredients, except the ketchup.

  4. Prepare the pan by spraying a loaf pan with non-stick cooking spray.

  5. Fill the loaf pan with the ground beef mixture. Pat down the top of the meatloaf.

  6. Bake the meatloaf in the preheated oven for 65-75 minutes or until brown.

  7. Remove from oven and let rest for 10 minutes.

  8. Drain any extra juice from the pan and invert the meatloaf on to a serving plate. Spread the ketchup on top of the loaf and serve your Cracker Barrel meatloaf warm.

Have not tried yet but looks delicious! Confused though on the biscuits? The recipe says biscuits but looks like hashbrowns is what was put in??

This recipe sounds good. However, I am a little confused about a couple of the ingredients. The recipe calls for frozen biscuits. In the video the recipe calls for hashbrowns. So which one is right? I'm sure both work just fine!! Thanks

Tweaked this recipe a bit by accident. I bought petite diced tomatoes with Tuscan herbs (Tuttorosso) and drained them, pressing out any liquid. The mixture was still a little wet, so I added a handful of quick oats, added chopped parsley and a few chopped chives, 2 gloves chopped garlic. The meat loaf was so moist and packed layers of flavor. My husband, who is the meatloaf master, raved over it - this recipe is a keeper.

I'm curious if this could be made in a plastic lined loaf pan then frozen to cook later. I don't see any ingredient that wouldn't freeze well. I have a vacuum sealer and do a lot of frozen meals.

I have been making my meatloaf for the past twenty years from a Cracker Barrel copycat recipe and it is delicious, but the ingredient list is nothing like this one. I guess over the years things have changed and I have not kept up. I cant wait to try this version.

For BETTER than Cracker Barrel meatloaf, substitute half of your ground beef with ground pork, or double your recipe with a pound of beef, a pound of pork, and double everything else. Leftover meatloaf makes awesome sandwiches!

What, no spices, herbs or garlic? Ketchup is not seasoning. Blech.

Can you explain grated frozen bisquits? I see you purchase a package of frozen bisquits that are ready for reheating and take 2 or 3 and pass them thru a cheese grater on the larger end. Is this correct?

The recipe doesn't tell you if you have to drain tomatoes or not. Seems like a lot of liquid for dry ingredients.

We did not drain the tomatoes, but we also had a lot of juice to drain from the pan. In the future, we would drain the can and will change the recipe to reflect this. Thank you for your comment!

This meatloaf made me drool just smelling it cook from across the hall. I'm not the biggest fan of beef, so I was surprised by how hungry this meatloaf made me!

I was pleasantly surprised by this meatloaf! It had a nice flavor and reminded me of my mother's home cooking. I would leave out the diced tomatoes next time I make it, and try using saltines instead of biscuits.
