Easy Oatmeal Almond Cookies

"This is a quick and easy recipe you can make when you’re short on time and guests are on their way. Hot and fresh cookies are always a hit. You can tweak these Oatmeal Almond cookies by adding some ground cinnamon. A pinch of ground nutmeg would also be great in this recipe. Adding three tablespoons of almond milk will make them chewier. These cookies would be lovely with a sweet drink. Our Cafe au Sin recipe would be a good pairing. But, other sweet wines would pair wonderfully with this dish too. "

Ingredients

  • 2 cup Almond Flour
  • 1 cup Quick Oats
  • 1 cup sugar
  • 1 teaspoon Almond extract
  • 3 egg whites
  • 1 cup sliced almonds

Instructions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Cover cookie sheets with parchment paper

  3. Lightly beat the egg whites for 2 minutes

  4. In a large bowl, combine Almond Flour, Sugar, Oats, Almond extract

  5. Add the beaten egg whites and mix to form a paste.

  6. Create 24 1-inch balls of dough

  7. Pour sliced almonds into a bowl.

  8. Dip each ball of dough into the slice almonds.

  9. Place the balls on the parchment paper and gently flatten each ball

  10. Bake for 15 minutes.
