"Who doesn’t love potatoes and cheese. Your family and friends will delight over this little casserole. It’s one of those dishes that if placed on the table steaming, will generate oooh and aaahs. You can sprinkle crispy bits of bacon to add another depth of umami flavor and texture to the dish. And you can add fresh herbs such as basil, oregano and rosemary to add some aroma and flavor. As for wine pairings, this dish can be paired with light red wines when served for dinner. Or, you can serve it with white wines if you’re serving a lighter meal. "

Ingredients

  • 1 cup butter
  • 1 ounce white onion
  • 4 clove Garlic
  • 5 tablespoon all-purpose flour
  • 1 teaspoon white pepper
  • 1 teaspoon salt
  • 2 cup almond milk
  • 2 cup swiss cheese
  • 2 pound potatoes
  • 2 cup broccoli florets

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Prepare the vegetables by mincing the garlic and onions, peeling the potatoes and cutting them into thin slices.

  3. Saute onion and garlic in butter until translucent.

  4. Add the flour, white pepper and salt.

  5. Slowly whisk in milk and bring to a simmer, constantly stirring until thickened.

  6. Stir in 1 cup of cheese and simmer for 2 minutes until the cheese is fully melted.

  7. Add the potatoes and broccoli to sauce and stir gently.

  8. Transfer to a ramekins and bake for an hour.

  9. Sprinkle with remaining cheese right before serving.
