Mandarin Marmalade

"Mandarin Marmalade has a sweet, orangey taste and a hint of lemon mixed in prevents this marmalade from becoming too sweet. Bits of peel that you will find in each spoonful of this jam. With this marmalade, your morning toast is about to get more delicious! A perfect gift for the holidays! SERVES: 1 jar PREP TIME: 15 MINUTES COOK TIME: 1 H 50 MINUTES TOTAL TIME: 2 H 5 MINUTES Ingredients 450 g white sugar 400 ml water 200 ml orange juice, fresh or store bought about 8-10 medium mandarins. 1/2 lemon juice Instructions 1. In a medium pot, combine the sugar, water and orange juice. Bring to the boil over medium heat and then simmer for about 20 to 25 minutes. 2. Meanwhile, thinly slice the washed mandarins, set aside. 3. Pour the mandarins to the syrup and allow to simmer for about 60 to 70 minutes. Add the lemon juice and simmer for another 5 minutes. 4. Remove from heat and pour hot marmalade into sterilised jars and seal immediately. 5. Once cooled, store in a cool dry place. Refrigerate after opening."
