"Tangy Shrimp Scampi: This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a chunk of crusty bread. The light flavors of lemon and herbs enhance the shrimp’s flavor. It’s deliciously saucy, perfectly rich and buttery and amazingly flavorful! Once the shrimp are added to the pan, the tip is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds and get rubbery. This indicates overcooking. You can also keep it low carb and serve this over zucchini noodles or with cauliflower fried rice!"

Ingredients

  • 2 tablespoon olive oil
  • 4 tablespoon butter
  • 4 clove garlic
  • 17 ounce medium-sized shrimp
  • 1 cup dry white wine
  • 3 tablespoon lemon juice
  • 1 cup chopped parsley
  • Salt and pepper
  • 1 cup parsley

Instructions

  1. Peeled and devein the shrimp.

  2. Add oil and half of the butter in a heated skillet.

  3. Add minced garlic and sauté until fragrant.

  4. Then add the shrimp, season with salt and pepper to taste

  5. Sauté for 2 minutes on one side until just beginning to turn pink.

  6. Add a splash of white wine and bring it to a quick boil for 2 minutes.

  7. Stir in remaining butter, lemon juice, and chopped parsley.
