Vegan-friendly Orange And Pomegranate Salad

"This fresh and healthy salad is so refreshing. It would be great for lunch or as a side dish for dinner. Give this vegan and vegetarian friendly recipe a try. You can add some lettuce, preferably romaine or another green leafy lettuce. You can also add red cabbage for its color and crispiness. You can also interchange apples for pears. Roasted cherry tomatoes also add some body and a depth of flavor to the dish. This recipe pairs perfectly with fruity and light white wines. "

Ingredients

  • 1 whole orange
  • 8 ounce cooked chickpeas
  • 1 cup pomegranate seeds
  • 1 Apple
  • 2 ounce Red bell pepper
  • 1 ounce White onion
  • 2 ounce Cucumber
  • Salt and Pepper to taste
  • 1 cup Olive OIl

Instructions

  1. Slice the orange in half.

  2. Separate the sections of one half.

  3. In a bowl, squeeze the juice of the other half of orange and add the olive oil. Add some salt and pepper and vigorously mix until incorporated well.

  4. Drain the cooked chickpeas and put in a bowl

  5. Thinly slice the apples and onions

  6. Cut the cucumbers and bell pepper into small chunks.

  7. Add all ingredients to a bowl and add a little of the dressing and mix all together.
