I can't attest to today's KFC, but when I worked there 30 years ago, we made them from scratch, and you were only allowed to make one batch from each re-rolling. We had to save the scraps in a bag in the fridge and add them to the next batch made. That prevented tough, chewy biscuits from overmixing. Also, the mixing bowl, beaters, flour, buttermilk, and vegetable shortening (no lard) had to stay in the refrigerator between batches to prevent excess glutens being released, which makes for fluffier biscuits. The ratio used was 1 pound of shortening per 5 lb. bag of flour and I THINK 1 1/2 cups of buttermilk. (It has been 30 years!) But there was a packet we added containing what I gather was baking powder, baking soda, and salt and perhaps some other flavoring or seasoning such as msg. There was no verbiage on the packet to indicate the ratios, that was proprietary information. I hope that this information will be helpful, it sure brought back a lot of memories.

Looking back over this, 1 1/2 cups of buttermilk isn't very much for 5 pounds of flour is it? lol! It must have been for each batch we made, but I can't recall the amount of flour for each batch. I know they measured everything in 3s...3 cups, 3 half cups (instead of 1 1/2), 3 Tablespoons, etc. So perhaps it was 3 cups of flour. But other than that, I'm afraid I am not being very helpful, am I? Sorry.

Can someone help please? My hubby and I when visiting USA HAVE to buy the biscuits from KFC my hubby loves them, my friend Genie, Campbellsview, Ky kindly sent me this recipe but reading your comments makes me doubtful. I just know he will know the difference, so our dear American friends can you please advise best recipe for these tasty biscuits we do not have in the UK. Thanks a bunch! Dee

I have not tried this recipe because i have my own i learned from my mom and grandma and they are from scratch and they are great and always have been and always will be GREAT !! Now i don't know who you say you worked for but if they made Biscuits from frozen then i think they would have been closed down! When you advertise a Certain thing made a certain way and it's not then you can be sued but now i do know of one fast food chain that doesn't make frozen biscuits and that's MacDonalds I Know because i went in every morning and the cook would be making fresh Biscuit Batter not Frozen now she would come in real early to make it but they were extremely Delicious I Might Add!!

Serves: 6Buttermilk Biscuits Ready In: Under 30 minutes Ingredients: 2 cups all-purpose flour 1/4 teaspoon baking soda 1 Tbs baking powder 3/4 cup buttermilk 1 teaspoon salt 6 Tbs lard Directions: Sift the dry ingredients in a large bowl. Cut in the lard with a pastry cutter or with two knives until a coarse texture is obtained. Add buttermilk and knead gently but thoroughly. The dough should be soft but not sticky: if it is, add a little more flour. Knead for 1 minute, wrap in foil or wax paper and refrigerate for at least 20 minutes. Preheat the oven to 450 degrees. Roll out the dough 1/2 inch thick on a lightly floured surface and cut with a biscuit cutter. (If you dont have one, a cup with the desired diameter will work.) Transfer biscuits to a dark baking sheet and bake until golden brown, 10-12 minutes.


tried as the rest of you to no avail..go to, go to K resturant secrets...however, used to work at KFC for yrs..hate to tell you those are same BOXED FROZEN biscuits used at hardies, as well as other fast food establishments..if not for frozen aspect..receipe, as adverised on, looks as if it might be able to pull it off
