This Corner Bakery Southwest Avocado with Corn & Tomato Salsa dish is a great, healthy snack or lunch you can enjoy without feeling guilty. Avocado halves act as the bowl for the corn and salsa. The fresh salsa recipe featuring corn complements the creaminess of the avocado half. Sprinkling tortilla strips on top adds the perfect amount of crunch to every bite. A little jalapeno is incorporated to add a little heat. This Corner Bakery recipe is an easy way to incorporate healthier recipes into your repertoire without giving up flavors.


  • 2 cups plum tomatoes, diced
  • 1 cup corn (thawed or grilled, removed from the cob)
  • 1 jalapenos, minced
  • 1/2 cup red onion, minced
  • 2 fresh limes, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3 tablespoons cilantro, chopped
  • 4 avocados


  1. Mix all ingredients except avocados together and let sit for at least 30 minutes.

  2. Spoon half of the salsa on to a plate (drain liquid if necessary).

  3. Cut each avocado in half or in quarters and arrange on top of the salsa.

  4. Spoon additional salsa on top and sprinkle with tortilla strips and cilantro.
