I'm sure that IF El Chico gave permission for this, one of their most popular and favorite recipes, they made certain that the ingredients were not correct. Tacos, not enchiladas, are made with flour tortillas. Enchiladas are NEVER made with flour tortillas-ONLY Yellow Not WHITE, corn tortillas. And the interior portion of the cheese enchilada is just that-CHEESE. For best and most authentic results, wet the tortilla on both sides and toss it onto a very hot griddle or skillet. When the tortilla has "steamed" on both sides, dip it slightly into a red or green enchilada sauce. Then proceed in the "rolling" process, adding the cheese and onion. Make sure that the open flap of the rolled enchilada is facing the bottom of the baking pan to insure the integrity of the enchilada's cylindrical shape Place the next to the first somewhat tightly. Don't bake in an oven. Bake in a microwave for 1.5 minutes. Let pan sit for two minutes. Add additional cheese, onions and sauce length-wise and down the middle of the enchiladas. Cover with cling wrap and microwave for 1.5 minutes. Remove the cling wrap and microwave one more time for :30 to make sure the cheese has melted, inside and on the top-middle. Important: Do NOT serve immediately. Let pan sit for at least 8 minutes so the enchiladas set up. Serve warm, not hot. Otherwise you risk your enchiladas falling into pieces. Now that's the way we make "Enchiladas de Queso" or Cheese Enchiladas the traditional and correct way. Ask me about guacamole. But please don't plan on adding tomatoes, etc. to it...that is, if you want the authentic recipe! Can be differing types of cheese but it is Longhorn or Colby often mixed with a little Monterey Jack. As far as spices go, there is nothing else added to the inside of the enchilada except chopped onions
