"Thanks for the recipes and the memories! I can't for the life of me remember the name of the place that made them or even the name of the sandwich itself, but way back in the 80s I loved to order a small sub that was cooked on a grill right in front of you. It had ham and a little pineapple that was chopped up as it was cooked then served on a toasted bun with lettuce tomato and mayo. There was probably another ingredient as well, but my old brain can't seem to find that file!"

"I wasn't much of a school lunch eater. It's probably hard to believe given the path that I've taken and my job these days, but as a kid, going through the lunch line gave me so much anxiety. I was constantly worried I would say the wrong thing, get the wrong food, or not have enough money. Serious anxiety. So imagine my surprise when on my oldest's first day of kindergarten he came home with his lunch untouched and said "oh, I decided I'd rather go in the lunch line!" Hah! Where did that kid come from? There were always one or two days a month where I would make an exception, throw caution to the wind and brave the lunch line . One of those days was Mexican Pizza Day"

This recipe is a delicious and simple dish that is perfect for a crowd or party! Would make a great make to carry along to a pot luck dinner. This is assembled much like any regular lasagna recipe would be made by layering the ingredients. The topping combinations are endless depending on what you like.
