Ingredients

  • 16 ounces chocolate candy coating
  • 3/4 teaspoon raspberry extract
  • 1 sleeve round butter crackers (such as Ritz, about 30 crackers) (see Notes)

Instructions

  1. Line your counter or baking sheet with parchment paper. 

  2. Melt the chocolate candy coating in the microwave according to the package directions. Once melted, stir in 3/4 teaspoon raspberry extract (see Notes). 

  3. Using a fork, dip crackers in the melted chocolate, allowing excess to drip off. Place on parchment paper. Continue until all of the melted chocolate has been used (see Notes). 

  4. Allow the chocolate to harden at room temperature or in the refrigerator. Store cookies in an airtight container in the refrigerator. 

Notes

  1. Our test kitchen yielded 30 cookies when making this recipe. More or less cookies may result depending on the thickness of the chocolate coating on each cracker. 

  2. More or less raspberry extract may be used according to your taste preference. If desired, begin by adding 1/2 teaspoon of extract. Taste test the chocolate on a spare cracker and add more extract in 1/8 to 1/4 teaspoon amounts until desired taste is achieved. 

  3. You may need to re-melt your chocolate candy coating in the microwave for 10 seconds at a time if it begins to harden as you are coating the crackers.
