This easy dessert recipe has only five ingredients, and we bet that you already have everything you'll need in your pantry. The baking method is also very simple. You'll start by sifting together the flour and salt. Set that mixture to the side, and then cream the butter for a few minutes in a stand mixer or with a hand mixer. Next, add in the vanilla and slowly add in the powdered sugar, mixing until fluffy. Add in the flour and salt mixture last to form a dough. You'll spread the dough out into a prepared baking pan, chill, bake, slice, and bake again! The end result is a classic buttery shortbread that literally melts in your mouth. Serve with a cup of tea on the side for the true Ted Lasso experience!

Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon coarse salt
  • 1 cup or 2 sticks unsalted butter, room temperature
  • 3/4 cup confectioner's sugar or powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Sift flour into bowl. Add salt. Mix to combine. Set aside.

  2. Mix butter in stand mixer with paddle attachment on high speed until fluffy, about 3-5 minutes. 

  3. Add vanilla to butter and mix to combine.

  4. Slowly add the powdered sugar, mix on low until pale and fluffy.

  5. Gradually add the flour/salt mixture. Mix on low speed until just combined.

  6. Line baking pan with parchment paper.

  7. Transfer dough to prepared pan. Pat and smooth out dough to even thickness, about 1/2 inch thick.

  8. Chill the dough in the refrigerator for 30 minutes.

  9. Preheat oven to 300 degrees F. Arrange rack in the middle of oven.

  10. Remove the chilled dough from the refrigerator and bake in the oven for 20 minutes. After 20 minutes, remove the dough from the oven and slice into squares in the pan. Return the pan to the oven and bake for an additional 25 minutes.

  11. Let cool completely in the pan.

  12. Re-slice if necessary and serve.
