A one-pot baked chicken recipe that is a simple dinner idea and will satisfy even the pickiest critics. This one-pan casserole has all of your favorite things: chicken, cheese, pasta, and a dash of roasted red peppers. This spaghetti casserole will transport you back to days when mama was cooking in the kitchen. You can add chopped button mushrooms for a mild-earthy flavor. You may also add shrimp if you’re in the mood for seafood."

NotesHerbs such as oregano, thyme and fennel are a great addition to this chicken spaghetti recipe too. Adding some vegetables such as baby broccoli and cauliflower would be perfect to mix into this recipe as well.

Ingredients

  • 10 ounces chicken breast
  • 18 ounces dried spaghetti
  • 8 ounces cream of mushroom
  • 2 cups grated Cheddar Cheese
  • 1 ounce diced green bell pepper
  • 1 ounce diced onion
  • 4 ounces diced roasted red peppers
  • 2 cups chicken stock
  • 1 teaspoon cayenne pepper
  • Salt And Pepper, to taste

Instructions

  1. Cook pasta according to package instructions. Set aside.

  2. Cut the chicken into bite-sized pieces.

  3. In a casserole pan, combine all ingredients (except provolone) and mix well.

  4. Bake in the oven for 30 minutes at 400 degrees Fahrenheit.

  5. Top with provolone cheese and put back in the oven for another 10 minutes.

  6. Serve with crusty French bread and rich white wine.
