Southern Ham Biscuits

Southern Ham Biscuits

"It’s pretty customary to start a meal with bread, right? But, how often do you get fresh ham biscuits at the beginning of a family meal? They aren’t hard to make. But, you just have to be a bit precise to make sure they come out the way you want. The name of this dish is pretty self-explanatory. These are flaky biscuits with bits of ham in them. If you have extra ham leftover, this is a great way to use it. These biscuits are great with butter, honey, or even lightly sweetened preserves."

Preparation Time15 min

Cooking Time20 min

Cooking MethodOven

  • 1 teaspoon baking soda
  • 4 teaspoons baking powder
  • 2 cups butter
  • 1 cup buttermilk
  • 1 cup ham
  • 1 cup chopped chives
  • Salt and pepper to taste

  1. Sift dry ingredients into a bowl.

  2. Grate frozen butter into dry ingredients and mix until ingredients have a grainy texture like cornmeal.

  3. Add the ham.

  4. Add the milk and mix until a firm dough is created.

  5. Fold dough over onto itself a few times.

  6. Roll out the dough on a floured surface to a ½ in thickness.

  7. After each roll, turn the dough a quarter turn.

  8. Cut the dough into the desired shape with a dusted cutter.

  9. Try to get as many pieces from the dough as you can.

  10. Reroll and recut the dough until all used up.

  11. Bake at 450 for 15-20 minutes.
