I am definitely a potato person. This recipe looks delicious. I love oven roasted potatoes. I dont always have a lot of time to spend on prepping for a meal and this recipe looks like it would be pretty fast to prepare and toss in the oven to cook while I am preparing my main course.

This recipe features a great simple go - to roasting method that works for any type of potato. Sweet potatoes are great like this too, but I would leave them in for about 10 minutes longer, as they are more dense. I love to get this rainbow variety whenever it is on sale, since it is fun for the kids and a great way to get them to eat more veggies!
