  • 4 ounces unsalted butter
  • 6 ounces bittersweet chocolate
  • 2 eggs
  • 2 egg yolks
  • 1 cup sugar
  • 1 teaspoon salt
  • 2 tablespoons all-purpose flour


  1. Preheat oven to 450 degrees Fahrenheit

  2. Brush 6 ounce ramekins with melted butter and dust with flour.

  3. Tap out the excess flour.

  4. In a double boiler over simmering water, melt the butter into the chocolate.

  5. In a medium bowl, beat the eggs with the egg yolks, sugar, and salt until thickened.

  6. Whisk the chocolate until smooth.

  7. Quickly fold it into the egg mixture.

  8. Spoon the batter into the ramekins and bake for 12 minutes.

  9. Let it cool for 1 minute.

  10. Cover each with an inverted dessert plate and carefully turn each one over.
