I was interested to see that this recipe doesn't call for the pasta to be cooked first. I know there are a number of lasagna recipes that take that approach, and I've wanted to try doing stuffed shells that way since I've managed to split more than my share of shells cooking them first, then stuffing. I'm thinking that this recipe would work well with stuffed shells rather than the manicotti. I'd keep the Olive Garden bolognese sauce as written, with the meat and wine since I don't think you can ever have too much meat in a recipe.
