Copycat Cracker Barrel Hash Browns Casserole

Copycat Cracker Barrel Hash Browns Casserole
Copycat Cracker Barrel Hash Browns Casserole

This recipe for Copycat Cracker Barrel Hash Browns Casserole is one of the tastiest Cracker Barrel restaurant recipes for side dishes! This hash browns casserole is made with frozen hash browns, sour cream, onion, and cheese. This is truly one of the easiest side dish recipes to make. Luckily it's not only easy, but also so satisfying.

You can always make this dish ahead and freeze it. This cheesy casserole is comfort food at its best! You won't believe how easy it is to make a delicious casserole side dish. After one bite of this dish, you'll feel as though you are sitting at a country style restaurant in your own kitchen.

  • 2 pounds frozen hash browns
  • 1 (10.25-ounce) can cream of chicken soup
  • 2 cups sour cream
  • 1/2 cup melted butter
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced red bell pepper (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups shredded cheddar cheese, divided

  1. Preheat oven to 350 degrees F.  Spray a large, 4-quart, bake dish with cooking spray (see note).

  2. In a large bowl, combine hash browns with soup, sour cream, butter, onion and red pepper. Season with salt and pepper and stir in 1 cup of the shredded cheese until well mixed.

  3. Spoon into prepared bake dish and bake for 45 minutes. Sprinkle with the remaining 1 cup of cheese and continue to bake another 10 minutes until cheese is melted and lightly browned on top.

This makes a large quantity and is best if baked in a dish larger than a standard 9 x 13 casserole. You can measure your largest bake dish by pouring in water to see what quantity it holds. If you only have a 9x13, the finished casserole will be thicker and will need at least 10 more minutes of bake time before adding the final cheese.

I always love visiting my family in the South and stopping into Cracker Barrel. We don't have them where I live, so it's always a treat! Their hashbrowns have always been my favorite, so I am looking forward to making them at home!

I make this recipe every single time I have someone visiting from out of town. I toss it together before heading to bed, put it in the fridge. Once I'm up in the morning, it goes into the oven while the coffee brews. Perfect for getting all the sleepy heads out of the bed on a lazy weekend.

I'm always looking for new things to make with hash browns, and I love Cracker Barrel's! Can't wait to give it a try )

I used cream of mushroom soup instead (because that's what I had) and added crispy fried French's White Cheddar Onions as a topping. Not a red pepper fan, so I omitted those, but we can devour this instantly!!! Thanks!

This would be a good side dish for Easter supper.

I will make this but, will not add much cheese due to dialysis patient, sounds good.

I really enjoyed this casserole. I've never tried the Cracker Barrel dish it's based on, but I thought it was really great. The red peppers were a really nice touch. I could probably eat the whole casserole dish of this and be happy.

This homemade casserole is MILES better than the one you can actually get at Cracker Barrel. Excellent!

Creamy, cheesy, and very good. I haven't had the Cracker Barrel version, but thought this was a tasty comfort food dish.

I burned my mouth on this casserole, but it was worth it.

Creamy and delicious! Though I would cook the hashbrowns a little longer to make them crispier.

Tasty! Though I like my hashbrowns more crispy, but that's just me.

Perfectly cheesy. I had to go back for seconds!

I prefer my potatoes a little crispier and less creamy, but that is just a personal preference. My family ate these up even though they weren't necessarily my favorite.

Flavorful and delicious. Also not as mushy as some of the casseroles I've had at Cracker Barrel but I'd say that's a good thing.

I always enjoy a cheesy potato side dish, and this one is great!

This was so good! It would make a great filling breakfast for a big group. Would be even better with a side of fried eggs.

SO cheesy, and SO good! A great side dish I'd serve my family anytime.

This would be a really great side dish for a potluck!

This cheesy casserole was delicious!

I think this is a recipe that I could use in a dutch oven while camping, it is definitely a keeper

Greatest Hash browns I have ever tasted. Bill Coffman
