"Got some leftover mashed potatoes? Here is a perfect recipe for you! Loaded mashed potato balls with a crunchy texture on the outside but stuffed with a creamy cheese inside. A 7-ingredient recipe that has the full aroma of bacon and potatoes. Mashed potatoes are usually a great side dish for meals. But regardless of what preparation is being use,d this recipe will be a great addition to your repertoire. You can even add grated cheese to the potato mixture, or grated nutmeg for a perfect flavor combination. You can also use mozzarella cheese if you want a melty cheese pull. Perfect with a choice of dipping sauces and a large variety of white wines."

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 egg
  • 4 ounces cheddar cheese
  • 1 cup green onions chopped
  • 8 ounces bacon
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder

Instructions

  1. Slice the bacon into bits and cook them until crisp.

  2. Mix mashed potatoes, garlic powder, minced green onion, and the bacon bits.

  3. Shape mashed potatoes into balls.

  4. Put a cube of cheddar cheese into the potato ball.

  5. Press potatoes around it until cheese are completely covered.

  6. Roll into a ball.

  7. Dip the ball into the eggs, then dredge into the breadcrumbs.

  8. Place into a baking pan.

  9. Bake at 375°F for 20 minutes.

  10. Serve with your favorite dip and your choice of light white wines.
