I don't know if this is like Olive Garden's soup, but it looks pretty good just on its own merit! I love hearty soups, spring, summer, fall, and winter. I freeze individual portions after I make a big batch, so it's handy when I need something quick and easy with no mess.

G'day! Whether this is authentic or not, I really enjoyed this hearty soup and made my own marinara sauce with chilli, so there was no need to add extra chilli. I will take the above reviewer's advise to add cumin next time. I did find the 2 3/4 quarts of beef broth too much and cut it back to 8 cups/2 liters and found it was more than enough! A definite keeper for me!

Not even close.Add a tbsp of chili powder and one tbsp of cumin along with changing the oregano to Italian seasoning and then you start to get closer... Everybody, the original has Cumin in it!!!!!!!!!!!!!!!!!!!!!!!!

I think this is not an authentic recipe, my grandmother, father and Aunts + a great italian chef on foodtv does not put 2 different kinds of beans and all the vegetables olive garden does
