"Filipino beef stew is always a crowd favorite for family-style dinners. It captures the hearts of everyone regardless of gender and age group. There are many cultures that produce tasty and interesting stews. Generally, meat with bones is used in stews, from the neck to the shank. These were considered the more flavorful cuts. Root crops such as potatoes, carrots, and turnips were used to thicken and give body to the stew. In the Modern Era, the idea of the stew continues to evolve. With different regional ingredients added along the way, the beef stew has evolved from a simple entreé recipe to a more flavorful dish."

NotesAdding a cup of red wine will further enhance the umami flavor of the beef. The red wine gives a tangy finish that will satisfy your stew cravings. You can use peanut butter and omit the liver spread if you prefer. Adding a teaspoon of five-spice will level-up the dish even further. You can also serve this up with a bowl of Thai fried rice.

Ingredients

  • 1 cup oil
  • 3 ounces Yukon Gold potatoes
  • 2 ounces Carrots
  • 1 ounce onions
  • 4 cloves garlic
  • 28 ounces beef tenderloin
  • 1 cup tomato sauce
  • 1 tablespoon tomato sauce
  • 3 cups beef stock
  • 2 tablespoons liver spread
  • 1 cup parmesan cheese
  • 1 ounce green bell pepper
  • 1 cup green peas
  • 1 bay leaf
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. In a heavy-bottomed pan, heat oil and sear bite-size pieces of beef until brown.

  2. Add chopped onions and sauté until translucent.

  3. Stir in tomato paste. Cook for 1 minute.

  4. Add soy sauce, tomato sauce, bay leaf, minced garlic, and stock.

  5. Bring to a boil and reduce to simmer.

  6. Simmer for 30 minutes.

  7. Add diced potatoes and carrots.

  8. Add the liver spread and simmer for another 10 minutes.

  9. Add green peas, chopped bell peppers, and return to simmer for another 5 minutes.

  10. Season with salt and pepper.

  11. Top with grated parmesan cheese.

  12. Serve with a slice of French bread and a bottle of red wine.
