I had never heard of barbacoa before I moved into this neighborhood - I tried it at a popular local taco joint near my home and was completely hooked! This stuff is so much more authentic and rich in flavor than any "American" ground beef tacos. It is so tender and juicy that it practically melts in your mouth. When entertaining guests, I like to have 2 crock pots going - one for barbacoa beef, and one for pulled chili lime chicken. Then I set out a variety of toppings and sauces so everyone can make their own tacos!
