"This cheesy broccoli soup recipe is so satisfying! It’s loaded with fresh broccoli and has a creamy texture. This healthy ingredient is the star of this soup recipe. It’s the perfect way to celebrate this outstanding vegetable. If you’d like, you can also garnish this soup with croutons or sautéed shrimp. You may also add some cumin or roasted garlic for a more flavorful soup. A cold glass of light white wine is a perfect combination of a velvety broccoli soup. "

Ingredients

  • 4 tablespoons butter
  • 24 ounces fresh broccoli
  • 2 ounces onion
  • 1 ounce carrot
  • Salt and pepper to taste
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1 ounce roasted almonds

Instructions

  1. Melt the butter in a heavy-bottomed pan over medium-high heat.

  2. Add chopped broccoli, minced onions, and carrots. Sauté until onion is translucent.

  3. Add the flour and cook for 1 minute until it begins to get some color.

  4. Add stock and bring to a boil. Reduce to simmer and cook for 15 minutes.

  5. Stir in cream and cheese.

  6. Using an immersion blender, puree the soup.

  7. Season with salt and pepper to taste.

  8. Top with roasted almonds.

  9. Serve with freshly baked French bread.
