This Homemade Disney Ratatouille is a great vegetarian entree to enjoy any night of the week. The Disney movie-inspired recipe is just like the version depicted in the blockbuster. Layers of eggplant, mushrooms, zucchini, onion, and pepper form the casserole recipe. The casserole also has plenty of cheese to make the perfect bite. Classic French herbs add to the rich flavor of this entree. This is a great main dish to serve when you have lots of guests coming for dinner.

My nephew is so bad with food and vegetables is a definite no go area which I don't get because I love all food! But this might be a clever way to get him to at least try some kind of vegetables, we could watch the film together and then make this mean afterwards!

I have been looking for a new way to make ratatouille, so I will need to try this recipe. I bet you can make this ahead of time, too.
